The middle part of today was consumed by the longest, most rambling memorial service EVER, in honor of my dad's sister's husband's father. Why so long? It started as a Catholic funeral, then came the hordes of veterans telling rambling stories, and THEN they brought in the full honor guard for a 21-gun salute/taps on the bugle/slooooow folding of the flag for the widow.This evening, I consoled myself by making the best salad ever. I needed to record it somewhere, so… here.The best salad everComposed of torn red leaf lettuce, baby spinach, and thinly shaved fennel bulb and radishes. Topped with toasted pumpkin and sunflower seeds. Dressed with thinly sliced shallot mellowed in lime juice, whisked with honey and olive oil.Heaven!
